A grease interceptor is a small 15 to 100 gallon capacity tank, most of the times they are located underground below the 3 compartment sink in restaurants with lower passive devices that fill with fats, oils, and grease (FOGS) and with a low flow rate. It’s function is to slow down the flow of water coming from drains and allowing the water with grease time to cool, this cooling causes the grease to coagulate & float to the top while other heavier solids fall to the bottom of the tank, the remaining water is free to pass through on the city sewer lines. The minimum cleaning frequency required by your Miami Dade GDO is 90 days, however with the capacity this tank provides it’s recommended that the cleaning be more frequent to prevent it from operating poorly or improperly. Please remember that FOG clogged lines can back sewage up into your establishment and create a hazardous situation.
